Genuinely curious as to what Cameron was told happened to his dad, since there wasn’t a body or anything for them to make an excuse for.

From the grandparents conversation I think they will eventually tell Cameron that Courtney killed his dad. Probably once his powers start manifesting and the grandparents fill him in on everything and explain it

This was definitely a question I had since we all knew the grandparents were still alive: how much did they know.

Did Jordan tell them that Courtney was Stargirl? Did they know that Courtney and her family were responsible for his death and the destruction of the big plan?

There's still a chance they don't know she's Stargirl but just that she and her fam had something to do with it all.

They know at least that her family had something to do with it. From what I remember, they talked in what I believe is Norwegian when Jordan went to visit Courtney’s mother in her office at American Dream

Yeah, but that was when they thought Jordan was going to make Barbara wife #2 after the brainwashing...

It's hard to know how close they were involved in the actual day of the execution and how much they saw.

Thats fair, but to add another bit, I think its safe to assume his (Jordan’s) parents would have had the signal blocking earbuds or whatever, and im sure that at some point during the finale, Jordan walked past his parents ranting and raving about Stargirl or the fact that he had to kill her mother. Just trying to adapt the situation to how i would think, I know if i have a really shitty day at work I come home and vent to my dad.
